The "Triticum dicoccum" is an ancient cereal somehow similar to durum wheat. Unlike the latter, it boasts a lower level of gluten and a greater quantity of mineral salts. The generic Italian term "Farro" refers to three different wheat species: spelt (Triticum spelta), emmer (Triticum dicoccum), and einkorn (Triticum monococcum.)
