So simple yet so popular. Yet again, another dinner that doesn’t call for a long list of ingredients but tastes creamy and well spiced. It’s been very popular with my Facebook followers, since kids and adults alike seem to enjoy this easy recipe. You can also make this with rotisserie chicken. In that case, cook under pressure for five minutes to let the vegetables cool down a little, with a ten-minute natural pressure release.
ACTIVE TIME: 5 minutes
FUNCTION: Manual (High)
TOTAL TIME: 35 minutes
1. In the Instant Pot, combine the chicken, vegetable soup mix, corn, taco seasoning, salt, and water.
2. Secure the lid on the pot. Close the pressure-release valve. Select MANUAL and set the pot at HIGH pressure for 10 minutes. At the end of the cooking time, allow the pot to sit undisturbed for 10 minutes, then release any remaining pressure. Stir in the evaporated milk.
3. Serve with optional toppings, if desired.
Optional toppings: shredded Mexican cheese blend, sliced avocado, pickled jalapeños, chopped fresh cilantro
